A new Mexican cantina with a build-your-own guacamole bar and $12 spicy margaritas is now open in Prairie Village, filling the last vacant space at Meadowbrook Shopping Center.
Rulber's Restaurant Mas Cantina opened in late July at 5358 W. 95th St., replacing breakfast spot Another Broken Egg Cafe, which closed in fall 2025. Owner Rulber De La Torre signed the lease for the 4,559-square-foot space in October and spent months remodeling it, KCUR reported.
De La Torre already operates seven Mi Ranchito locations across Kansas, five of them in Johnson County. Rulber's is his eighth restaurant.
It is the first to carry his name.
"To come from the very bottom it is a dream come true, beyond a dream. ... It's also a unique name, the name of my son, 16. So Rulber stands for more than one person," De La Torre told Startland News on July 29.
The youngest of 12 siblings, De La Torre grew up on a small ranch near Michoacán, Mexico, and moved to Kansas at 15 in 1989. He opened his first Mi Ranchito in Olathe in 2004 with secondhand chairs he bought for $10 apiece. His operation now employs about 250 people, with 25 at the new Prairie Village location. His wife, Ana, and their children all work in the restaurants.
The concept was born because Mi Ranchito's menu had grown so large there was no room for new dishes De La Torre kept developing at home, according to the Johnson County Post.
Near the entrance, employees slice Hass avocados into volcanic rock molcajetes for the build-your-own guacamole, which starts at $15. Add-ons range from cilantro and cherry tomatoes to premium shrimp and crab. Fresh tortillas come off a grill beside the guacamole station. General manager Alex Papirrin oversees the front-of-house preparation.
The signature Billionaire Burrito pairs fried ribeye with grilled shrimp, crab meat, pico de gallo, jack cheese and chipotle cream sauce for $25, according to the Kansas City Star. Spicy margaritas ($12) combine jalapeño with mango, watermelon, guava or coconut. De La Torre's namesake cocktail, the Rulber's Dobel, uses his own tequila blended with lime juice, orange juice, agave nectar and Grand Marnier.
The décor leans ranchero: horseshoes line the walls and logo, and a canvas photo of De La Torre's late parents, Teresa and Nicolas, hangs on the back wall.
Rulber's is open 11 a.m. to 10 p.m. Sunday through Thursday and 11 a.m. to 11 p.m. Friday and Saturday. The opening brings Meadowbrook Shopping Center, located just east of Nall Avenue, to full occupancy alongside tenants including The Big Biscuit, Betty Rae's Ice Cream and The Bar Prairie Village.
